From: Elham Shahmohammadi (Friday night out in Thailand class)
2 lbs sirloin steak, trimmed and cut into thin strips
Marinade:
2 tbs vegetable oil
2 tbs soy sauce
2 tsp tamarind paste
1 lemongrass stalk
2 garlic cloves, crushed
1 tsp ground cumin
1 tsp ground coriander
1 tbs lime juice
1 tsp light brown sugar
Peanut Sauce:
2 tbs smooth peanut butter
8 floz coconut cream
2 tsp red Thai curry paste
1 tbs fish sauce
1 tbs light brown sugar
Method:
Soak bamboo skewers in water.
Blend all marinade ingredients in a food processor to a paste.
Marinade the beef strips in this mixture for at least an hour
Stir together all the peanut sauce ingredients and heat in a pan over low heat.
Thread the beef onto the soaked bamboo skewers. Grill on a BBQ.
Serve with the peanut sauce.
