INGREDIENTS
1.5 lb tomatillos
1/2 cup chopped onion
1 tbsp butter
1/2 tsp salt
1/2 tsp garlic powder
2 Jalapeño peppers, stemmed, seeded and chopped
1/2 cup minced cilantro
1 small lime (2 tbsp) juice
METHOD
Preheat broiler (convection low), rack 1/3 down.
Remove papery husks from tomatillos, rinse and halve. Arrange cut side down on a foil-lined baking sheet.
Broil 5 minutes to lightly char the skins of the tomatillos.
Meanwhile chop and saute the onion with the butter, salt, garlic powder and chillis.
Cook over low heat until starts to turn brown - don't forget to remove the tomatillos before they burn!
Mince the cilantro.
Juice the lime.
Blend everything together until finely chopped.
I cook the onion and garlic here as I hate both raw.
The slight sweetness of the cooked onion plays nicely against the sour lime and herbal note of cilantro.
