1 small onion
1/2 oz butter
1 tsp garlic, crushed
1 tsp dried thyme
8 fl oz cream (regular whipping) (mix 1/2 heavy, 1/2 milk)
1lb 11oz russet potatoes, finely sliced
2 tsp salt
Black pepper
2 oz grated cheese
Methods:
Preheat oven to 425
Slice the onion, fry in the butter until translucent
Add the garlic and the thyme, stir one minute longer
Add the cream, heat through.
Toss the potatoes in the salt and pepper and layer into the casserole dish
Pour over the cream mixture.
Grate the cheese over the top.
Cover with foil, bake until potatoes are tender
Remove foil, bake until cheese browns.
