Ingredients:
3 eggs
8 oz milk
420g flour
1/2 tsp salt
1/4 tsp ground nutmeg
Method:
Set a pot of salted water to boil (could use chicken stock)
Whisk eggs
Add milk, salt and nutmeg, whisk to combine
Slowly add flour, stirring continuously
Should form a very loose pasta dough.
Put the dough into the spaetzle maker basket over the pot of boiling water and slide back and forth.
In 2-3 minutes, they should rise to the surface - remove them using a slotted spoon.
Add butter and salt to taste.
