Ingredients:
8oz granny smith apples, peeled, cored.
Rind and juice of 2 lemons.
4oz raisins
4oz golden raisins
4oz currants
4oz dried apricots
4oz dried cranberries
4oz mixed candied peel
6oz dark brown sugar
4oz brandy
2oz butter
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon freshly ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon salt
Method:
Chop all the fruit and peel to 1/4 inch dice.
Place everything into a large dutch oven, and bring to a boil over medium heat, stirring continuously.
Reduce the heat to medium-low and simmer the mincemeat, stirring often, until the liquid is almost evaporated.
Allow to cool, cover, and place in the refrigerator, at least overnight, or up to a month.
