Ingredients:
3 oz butter
3.5 oz dark brown sugar
3.5 oz molasses
4 oz milk
4.5 oz flour
1 tsp ground ginger
1 tsp ground cinnamon
1 tsp baking soda
1 egg
4 tbs ginger jam (or 2 balls preserved ginger, diced + 2 tbs syrup)
Method:
Preheat oven to 300F
Melt butter, sugar and molasses in a small saucepan, stir until sugar is dissolved
Add milk and ginger jam, mix, and allow to cool
Mix the dry ingredients (flour, spices and baking soda) together in a medium sized mixing bowl
Add the egg and wet ingredients mixture from the saucepan, combine into a smooth batter with a whisk (don't overmix).
Line a 1.5lb loaf tin with parchement paper, and spray the inside with canola oil. Scrape mixture into tin.
Bake for 1 hour, or until a toothpick in the center comes out clean.
