Minor adaptions from Gourmet
1 lb mushrooms, cut to the size of small button mushrooms
3 tablespoons unsalted butter
2 tablespoons capers, rinsed and chopped
1 tablespoons minced garlic
2 tablespoons vegetable oil
1/4 tsp salt
1/4 tsp pepper
2 teaspoons fresh lemon juice
1/4 cup chopped flat-leaf parsley, chives, thyme, marjoram
Notes:
A cast iron skillet works well for this. 8" fits around 10oz.
Could be served as a starter with crusty bread.
Method:
Preheat oven to 450ºF with rack in middle.
Melt butter in a ramekin in the microwave. Stir on garlic, capers, oil.
Toss mushrooms molten butter mixture, and salt and pepper in a cast iron skillet
Roast, stirring occasionally, until mushrooms are tender and golden, 15 to 20 minutes.
Stir in lemon juice and parsley.
Notes:
Try adding 1 tbs balsamic.
Can we sub dried herbs somehow? Thyme? Rosemary? Use flavored oils?
