Ingredients:
1 lb ginger root (as young as possible)
24 oz water
1 lb sugar
Method:
Set a half-saucepan of water over high heat to boil
Meanwhile, peel the ginger root using a vegetable peeler and dice to 3/4-1" cubes. If you want to be fancy, use the peeler to round the cut edges.
Simmer the ginger in the water for 5 minutes. Throw out the water.
Replace with the 24oz water and the sugar.
Simmer until easily tender to a sharp knife.
