This is the most common form of a compound butter.
Ingredients:
1 lb butter (salted)
1/4 cup finely chopped Italian parsley leaves
1 small finely chopped shallot
3 tbs lemon juice
Pepper
Method:
Mash all ingredients together until well blended.
Spread the butter onto a 12 in square of wax paper.
Roll into a cylinder, tie off the excess ends into a knot.
Refrigerate.
