Ingredients:
165g plain flour
85g unsalted butter, chilled and diced
40g cheddar or gouda cheese, grated
2/3 sprig of fresh thyme
Method:
Place all of the ingredients into the bowl of the food processor and pulse in short 1 second bursts until the mixture resembles coarse breadcrumbs.
Add water 1 tbsp at a time, pulsing in between each addition until the pastry just comes together in clumps.
Tip the dough out onto the work surface and gently bring together to form a uniform dough.
Wrap in clingfilm and refrigerate until firm.
