Serves 2
8 oz dried spaghetti
Chicken stock concentrate
2 oz bacon or pancetta
2 egg yolks
3 tbs cream
1/2 oz Parmesan cheese, finely grated
salt & pepper
Could try adding a 4oz of white wine, then reducing it?
Method:
Set a pan of water to boil for the pasta, and add the chicken stock concentrate
Meanwhile, chop up the bacon into very fine pieces, and cook over a medium heat until browned
Put the pasta in the boiling water
Whisk the eggs, cream, cheese and a generous seasoning of black pepper in a large mixing bowl
When the pasta is done, drain and add to the egg mixture, stirring quickly.
Salt to taste, and serve, shaving additional parmesan over the top using a vegetable peeler.
