2 cups basmati rice
4 tablespoons oil or ghee
1 cinnamon stick
3 cardamom pods
3 cloves
2 bay leaves
1 tsp salt
4 tbs raisins
4 tbs nuts (almonds, cashews, pistachio)
1/2 tsp saffron
Method:
Wash rice until water runs clear
Heat ghee in a large saucepan and fry the cinnamon, cardamom, bay leaves and cloves for 1 minute
Stir in the raisins and nuts, stir frequently until nuts are just golden brown
Add the rice, stir and cook for 30 seconds.
Add the salt and water, and bring to a gentle boil
Reduce to a simmer, and stir in saffron, cover and cook for about 10 minutes until all water is absorbed.
