1 large onion
1 oz butter
1.5 lbs red cabbage
1 apple (granny smith)
1 clove garlic
1/4 whole nutmeg, grated
1/4 tsp ground cinnamon
1/4 tsp ground cloves
3 tbs brown sugar
3 tbs wine vinegar
Salt & Pepper
Method:
Preheat oven to 300
Set a large cast iron dutch oven over medium heat.
Slice the onion finely and saute in the butter
Meanwhile, quarter the cabbage, remove the core, and and slice into 1/4 strips.
Add to the pan and stir well.
Peel, core and dice the apple finely, add to the pan.
Add the rest of the ingredients, stir well, and transfer to the oven.
Cook for an hour. Reheats well the next day.
