I prefer the finer, more delicate varieties (often labelled as haricots verts, which is just green beans in french).
In a cast iron pan over medium heat, melt a tablespoon of butter, and about 3oz green beans per person. Saute for a couple of minutes, then add a small handful of toasted flaked almonds and a generous sprinkling of lemon-pepper salt. Remove when beans are just starting to turn tender and almonds are browning.
