Roasted Strawberry Ice Cream

• • 1lb frozen strawberries

  • 6 oz sugar

  • 1 oz lime juice

  • 2 tbs cornstarch

  • 6 oz milk

  • 6 oz heavy cream

  • 1/4 tsp fine sea salt

  • 1 oz golden syrup (or substitute corn syrup)

  • 1 tbs vanilla extract

  • 1/8 tsp xantham gum

Method:

• 1. Preheat oven to 375

  2. Put berries, cornstarch, and the sugar in an 8x8 metal pan, stir to combine, and roast for 30-35 mins.

  3. Put all the other ingredients into the blender and blend on high for a couple of minutes.

  4. Process in the gelato machine

Method:

  2. Put berries, cornstarch, and half the sugar in an 8x8 metal pan, stir to combine, and roast for 25 mins.

  3. Put the other half of the sugar + all the other ingredients into the blender and blend on high for a couple of minutes.\

  4. Process in the gelato machine

Makes 7oz too much.
