2 cups rice
2 cups water
2 tbs sugar
1 tbs kosher salt
2 tbs rice wine vinegar
Method:
Cook rice and water (without salt) until all water is absorbed. Set aside.
Microwave sugar, salt, vinegar until hot (approx 30s) - stir to partially dissolve.
Dump rice into wooden or glass bowl, drizzle on vinegar mixture.
Fan rice (use a paper plate?), whilst folding with spatula.
Do not refrigerate.
